The perfect
flat white.
In New Zealand and Australia, coffee consumption is relatively low, but when people do drink it, it’s always high-quality. The local barista community felt it was a shame that coffee is often mixed with a lot of milk, causing it to lose its character. The solution was the flat white.
The flat white tones down the intensity of the coffee while preserving its character.
Here's how to make this classic dish:
- Brew a double ristretto (the same amount of coffee with only 20–30 ml of water). A double ristretto is stronger and more acidic than a classic espresso doppio. This allows the coffee’s natural characteristics to shine through more clearly when combined with milk.
- Frot 120–150 ml of milk, frothing it slightly less—this keeps it more liquid and gives it a more pleasant mouthfeel.
- Pour the frothed milk over the ristretto.
