In the 19th century, coffee became the drink of choice for the working class. To keep breaks short, the coffee had to be strong and quick to prepare. That’s where espresso came in: it contained just as much caffeine as a cup of filter coffee—but was much faster to make.

Espresso is a particularly dark roast and is brewed under high pressure.

Here's how to make this classic dish:

In a portafilter machine:

  1. Grind the coffee as finely as possible.
  2. Fill the portafilter with coffee and press it down firmly with the tamper.
  3. Insert the portafilter into the machine and start the brewing process.

Of course, you can adjust and refine the preparation to suit your taste. Our recommendation: 30–40 ml of water and 7–9 g of ground coffee.

Ristretto:

Use the same amount of ground coffee but with only 20–30 ml of water. This results in more acidity and a higher concentration, making the espresso stronger.

Lungo:

Use the same amount of ground coffee with 40–60 ml of water. This makes the espresso less concentrated and gives it more bitterness with less acidity. It therefore has a slightly milder flavor.

Special tip: Alwayspreheat the cup first; otherwise, the espresso will cool down too quickly.
