cortado.

As is well known, espresso is a typical Italian beverage, but over time, several variations have also emerged in Spain, such as the cortado. Like a cappuccino or an espresso macchiato, it is topped with milk, but it is stronger and is usually served in a smaller glass.

The cortado is the Spanish version of the cappuccino.

Here's how to make this classic dish:

  1. Make an espresso.
  2. Froth 100–120 ml of milk.
  3. Pour the frothed milk over the espresso.

Special tip: Try the Cortado Leche y Leche. To make it, first fill the glass with caramelized condensed milk (Milchmädchen). Then carefully pour the espresso over it first, followed by the frothed milk. You can also make the milk foam with warm milk (max. 70°C) in a French press.
