50 ml Café Intención Aromatico (ground, pour-over, or Chemex)
200 g Date tomatoes
2 tbsp Olive oil
1 tbsp Cane sugar
1 tbsp Balsamic Vinegar
- Salt
- Chili flakes
2 handfuls Cashews

Preparation

  1. 1.Step

Remove the pomegranate seeds from the skin. Peel the carrots and slice them thinly. Wash the cilantro and shake it dry. Remove the leaves from the stems and chop them coarsely. Wash the lemon thoroughly, dry it, grate the zest, and squeeze out the juice.
  2. 2.Step

Heat the olive oil in a pot and sauté the carrots briefly. Add the ras el-hanout and couscous. Add 200 ml of Café Intención Aromatico (hand-filtered or Chemex), lemon zest, lemon juice, and salt, and stir until the coffee liquid is absorbed. Set the pot aside and continue stirring until the couscous is light and fluffy. Cover the pot with the lid.
  3. 3.Step

Wash and drain the tomatoes. Pour olive oil into a pan and heat it. Add the tomatoes and sauté them vigorously. Caramelize the sugar, then deglaze with 50 ml of Café Intención.
  4. 4.Step

Add the balsamic vinegar. Season to taste with salt and chili flakes. Continue simmering briefly.
  5. 5.Step

Stir the couscous again. Add the pomegranate seeds, cashews, and cilantro, and fold them in.
  6. 6.Step

Spoon into bowls or deep plates and serve with the braised tomatoes.

Growing cilantro yourself is super easy. The advantage: This way, you can avoid buying those tiny, plastic-wrapped portions from the supermarket.
